Soft boiled eggs are a staple in Asian ramen bowls. Learn how to make your own!
Ingredients: 2 eggs, 2 tbsp of Mirin, 2 tbsp of soy sauce, 1/2 cup of Bonito soup base or Dashi stock.
Step 1: Fill your pot with enough water to cover your eggs, and bring the water to a boil over medium high heat. Then, cook your eggs for around 5–7 minutes. Prepare an ice bath of the same amount of water.
Step 2: Combine the mirin, soy sauce, and soup base in a separate pan, and bring to a boil. Cook for 1–2 minutes, then let cool completely. Place the sauce in a bag.
Step 3: Your eggs should be ready to place in the ice bath. After completely cooled, peel the eggs.
Step 4: Place the cooled eggs in your sauce bag, and let it marinate for 24 hours in the fridge. The next day, slice eggs in half and spice up your ramen!
